Black Truffle Tagliatelle

Ingredients (Serves 4)

  • 1 pound fresh tagliatelle

  • 1/4 cup cream

  • 1/2 cup Grana Padano grated

  • 1 fresh black truffle, with slicer

  • Salt and pepper to taste

Method

Boil pasta in abundant salted water. In a thick bottom sauce pan add cream, Grana Padona, salt and pepper. Bring to boil. As the cream reduces as 2 ounces of boiling pasta water. Sauce should be the consistency of light cream.
